Step 1: Choose the Right Grit
- Coarse Grit (200-400): For very dull knives.
- Medium Grit (1000-1500): For regular sharpening.
- Fine Grit (4000-8000): For polishing.
Step 2: Prepare the Stone
- Soak the stone in water for 10-15 minutes or apply oil if using an oil stone.
Step 3: Sharpen the Knife
- Hold the knife at a 15-20 degree angle to the stone.
- Push the knife across the stone, using a sweeping motion.
- Repeat 10-15 times on each side.
- Use finer grit stones to polish the edge.
